Nick Weston is a hunter, forager, fisherman and chef from Sussex in the UK. He left London after 3 years working as a freelance chef in the events industry and built a treehouse in a quiet Sussex wood from recycled and natural materials. For the following 6 months he lived in the woods completely off-grid to gain a better understanding of how to use wild ingredients by foraging, fishing and hunting for all his ingredients, supplemented by a few basic larder staples and a small vegetable patch. This provided him with a rich, varied diet and self-sufficient lifestyle, which would go on to form the ethos of Hunter Gather Cook. A book about his experience The Tree House Diaries: How to Live Wild in the Woods was published in 2010.
Hunter Gather Cook was established in March 2011 with the construction of the original HQ. Nick’s vision was to create a foraging and cookery school that blended a mixture of foraging, game butchery and fire cookery with an emphasis on creating high-end dishes using wild produce. 8 years on and many courses later Hunter Gather Cook has passed on their knowledge and skills to 1000’s of people with a passion for wild food and fire from their 30ft Treehouse in the middle of the woods. Nick has continued to expand the rich and varied courses they offer with the acquisition of an old threshing barn in a remote location at the foot of the South downs which will be the bricks & mortar of Hunter Gather Cook and house all their new courses, banquets and events. Their cookbook ‘Hunter Gather Cook: Adventures in wild food’ is being published in April 2019.
